Essential ingredients

To make a cake

  1. Wheat flour/bread flour: 3 cups (loosely packed) or 390g
  2. Warm milk 1/2 cup or 120 ml; If you don't want to add milk, you can use plain water.
  3. Warm water 1/2 cup or 120 ml
  4. Unsalted butter (softened) 1/4 cup or 57 g
  5. Sugar 2 and 1/2 tbsp or 32g
  6. Salt 1 teaspoon or 6 g
  7. Yeast (instant/active dry yeast) 1 teaspoon or 3 g

To fill

  1. Cream Cheese: 8oz 226g
  2. Sugar: 1/4 cup or 50 g
  3. Vanilla extract/vanilla powder 1/2 tsp
  4. 1 egg yolk or 2 tablespoons of flour

How to make cream cheese kolaches

It's really easy to make this cream cheese kolache. The whole process from preparing the dough to baking the bun takes less than 2 hours.

How to prepare yeast mass

In a bowl, add warm milk and water, sugar, salt, yeast and soft butter and mix everything.

Make sure all ingredients are at room temperature and the milk and water should be lukewarm (not hot). warm but pleasantly warm.

Yeast cells will die if they have a high temperature (130 F and above) and their activity will decrease in a cold environment (below 70 F).

Then add flour to this mixture and combine them into a shaggy dough.

If you are kneading the dough in a stand mixer, use the kneading hook.

If you are kneading the dough by hand, place it on a clean work surface and knead for a few minutes (6-8 minutes) until it forms a smooth dough.

The dough may be sticky at first, that's okay (it's supposed to be); you may be tempted to add more flour, but don't. The dough is ready after about 5 minutes of kneading.

First test (30 minutes)

Form into a ball; then flatten slightly, cover with a bowl or cloth, and let the dough sit on the counter for thirty minutes. This allows the dough to rest for a few minutes so that the gluten carriers can relax.

This rest prevents dough after dough from bouncing violently as we roll it into a thin rectangular sheet.

Divide and form buns

So for the next step of forming the buns, we first need to roll out the dough into a sheet (1/2 inch thick).

Then use a cookie cutter or an open glass to cut out circles (approximately 2 1/2 inches in diameter).

Place the croissants on a baking tray lined with baking paper.

Second entrance (45 minutes)

Then cover and leave the dough rings to rise for 45 minutes.

Prepare the cream cheese filling for the buns by mixing the cottage cheese, sugar and vanilla powder or vanilla extract.

When the dough rings have risen, use the bottom of a cup or a measuring cup to make a deep indentation in the center. Press hard and deep; otherwise the cream cheese filling will boil over during baking.

Brush the surface of the edges with egg yolk to give them a golden color and shine after baking.

Fill the center with the cream cheese, sugar, and vanilla mixture (1 1/2 to 2 tablespoons).

Now our yeast dough discs are ready to be put in the oven for baking.
